Detección alérgenos
Se trata de problemas emergentes en el control de calidad agroalimentario. La presencia de alérgenos supone un riesgo para la salud por lo que el Reglamento (UE) 1169/2011 obliga a la industria alimentaria a etiquetar claramente los ingredientes (y cualquier traza de contaminantes) que puedan causar alergias.ELISA, Flujo Lateral y PCR son técnicas rutinarias para la determinación de alérgenos en alimentos y en líneas de producción.
